But when the meal started, it was clear - Shannon Dogs are a winner with kids and adults alike.
Maybe it's been a while since you've had a Shannon Dog, or maybe you haven't ever tasted this treat. Here's the quickie overview (and that's all there is, really):
- Sautee equal parts sliced hot dog (sorry Andy), chopped onion, and chopped celery
- Fill hot dog buns and top with shredded cheddar
- Place them in a 9x13 and bake until the cheese is melted
We served these with garlic roasted potatoes. Also, the celery and onion is from our garden (Elisabeth insisted that we plant celery, though I knew that it wouldn't grow. Ahem!). And we introduced an adult version of Shannon Dogs that use jalapeño smoked sausage instead of hot dogs. There's room for interpretation.
I was just telling Karl about these last night! We were both trying to remember our favorite dinners from childhood. Karl's favorite by a landslide was taco night. Karl's mom would purposefully not tell him it was taco night until the last minute because he would get too excited and hyper.
ReplyDeleteMaybe you should go with a blended approach, then - Shannon Dogs Tex Mex. Instead of hot dogs use taco meat. The celery could be replaced by lettuce or tomato.
ReplyDeleteLooks good, Steve. I'm kind of disappointed that we didn't make a batch of these for Thanksgiving. Maybe Shannon Dogs should replace the turkey for future Thanksgiving dinners. ReplyDeleteWell I could easily make room on next year's menu for Thanksgiving Shannon Dogs - turkey, stuffing, maybe a bit of Jarlsburg or even some cranberries all wrapped in an oven roll and broiled.
